Marinated sardines

Ingredients

4 servings
  • sardine sardines raw 600 g
  • lemon juice 2 tbsp
  • olive oil a good one 4 tbsp
  • rock salt
  • chives

Steps

  1. Rinse and fillet the sardines.

  2. Place the sardines in a colander by making layers of fillets, and sprinkle rock salt on top of each layer. Put the colander in the fridge, and let the sardines sit for 30 minutes.

  3. Rinse the sardines to remove all the salt and dry them well with kitchen towels.

  4. Prepare the marinade by mixing the lemon juice and the olive oil in a bowl, and emulsify the mix by whisking it with a fork.

  5. Put the sardines in a plate, pour the marinade on them, and mix gently. Let them marinate for a few minutes.

  6. Sprinkle thinly sliced chives and freshly ground black pepper on each portion of sardines.

Notes

They go very well with toasted bread and butter.
